Parmesan Chicken Fingers

3 tbsp.Dijon Mustard 2 tbsp.white wine vinegar 1 teaspoon pepper 1 pound boneless,skinless chicken tenders 1 cup whole-grain bread crumbs (optional seasoning: 1 tsp garlic powder, 1 tsp. oregano, 1/2 tsp onion powder, black pepper) 1/2 cup grated Parmesan cheese Directions: Preheatovento 400 degrees. Line baking sheet with parchment paper. In medium bowl whisk together mustard,vinegar, and pepper. Add chicken tenders to mixture and coat thoroughly (or marinate for several hoursin refrigerator). In shallow dish or pie pan, combine bread crumbsand cheese. Dip each tender in crumb mixture so both sides are breaded and place on baking sheet. Bake for 12 to 15minutes until cooked through.
