Fruit Crumb/Cobbler

350 degree oven 9 x 13 baking pan

recipe:

1.25 c fruit juice 2 Tbsp lemon juice, or juice of 1 lemon 2 tsp vanilla 1 Tbsp tapioca flour 3/4 c Honey 1 Tbsp butter 1 tsp cinnamon 8 cups fruit - berries, diced apples, etc 1.5 c flour 1 tsp baking powder 1/4 c butter 1/3 c honey 1/4 tsp salt 1 c oats ____________________________________________________ 1. In a saucepan, mix juices, vanilla and tapioca until dissolved. 2. Add honey, butter, and cinnamon and heat to about 100 degrees, just warm. 3. Place thawed and/or chopped fruit in mixing bowl and pour warm liquid over it. Gently mix. 4. In the food processor blend flour, baking powder, butter, honey and salt. Pour into bowl and stir in oats. 5. Spray pan with cooking oil. Spread about 1 cup of the dry mixture over bottom. Scoop wet mixture on top. Sprinkle the rest of the dry mixture over top. 6. Cover pan with foil if it seems a tad dry. 7. Bake 40 minutes in pre-heated 350 degree oven. Take foil off and bake 5-10 minutes more uncovered. Cool. May serve with vanilla ice cream.
