1/4 tsp butter 1 egg 1/4 cup milk 1/4 cup brown rice flour 1/3 cup shredded carrot shredded or shredded apple 1/4 tsp cinnamon 1/8 tsp baking powder 1/4 tsp freshly grated ginger (optional) Pre-heat oven to 450 degrees. Place butter in appx 5.5 inch diameter baking bowl in oven. Mix remaining ingredients. Pour into bowl and bake for 15 minutes. Serve with sweetener and perhaps a squeeze of lemon.
