(Not just a cucumber salad - the best cucumber salad I've ever tasted)

Coarse Sea Salt A Cucumber, peeled and thinly sliced White Wine Vinegar Sugar White Pepper A Little Water Sprinkle some of the salt in a dish or a bowl. Place the cucumber slices in the dish, then sprinkle the rest of the salt on top. Put another bowl or dish on top of the cucumbers, then, holding tightly, shake well to get rid of some of the water. Mix the vinegar, sugar and white pepper in a bowl and then add a little water. Pour the mixture over the cucumbers and leave for an hour before serving.
