This traditional Italian recipe showcases tomatoes at the height of the summer season by doing very little with them and letting their intense flavour speak for itself. Perfect on a steamy night with some very cold, crisp white wine.
1 clove garlic, minced very fine 2 punnets cherry or grape tomatoes, sliced in half 1 good sized handful of basil Salt and pepper to taste 4 TBSP best quality extra virgin olive oil Spaghettini Grated parmesan cheese In a medium-sized bowl, combine garlic, tomatoes, basil, salt, pepper and olive oil. Let sit at room temperature while setting pasta water on to boil. When water comes to a boil, salt water and add pasta. Cook until al dente. Drain pasta and return to pot. Add tomato mixture. Turn heat to medium and stir until well combined. Serve with parmesan cheese.
