Summer Vegetable Salsa

Combine all ingredients except avocado. Refrigerate for 1 hour. Garnish with avocado and additional cilantro. Serve in cupped tortilla chips. May be made up to 4 hours in advance


6 plum tomatoes, diced 1/2 medium red and yellow pepper, chopped 1 carrot, peeled and diced 1/2 c corn (1 ear) 2 T cilantro, chopped 2 T Italian parsley, chopped 1 jalapeno, seeded and chopped 2 T fresh lemon juice 1 tsp salt 1 tsp pepper avocado, peeled and cut into 1/2 " pieces
