Gougeres [cheese puffs]

Preheat oven to 425. Lightly grease baking sheets. Bring water , butter and salt to a boil in a 2 quart pan. Remove pan from heat and add all the flour at once, beating vigorously until blended. Put back on moderate hear and beat until dough forms a ball. Remove from heat and add eggs, one at a time and beat to incorporate after each addition. Beat in one cup of the cheese, Drop one inch dollops of the dough on baking sheets, 1-1/2 inches apart. Top each puff with a pinch of grated cheese, Bake 15 minutes until puffed , crisp and brown. These freeze well/


1 c water 3 oz unsalted butter 1 tsp salt 1 c flour 5 eggs 1-1/4 c finely grated swiss cheese
