Pimento Potatoes

Melt butter; blend with flour. Add salt, pepper and onion. Gradually add milk and cook until thick. Remove from heat. Add cheese and blend well. Add pimento and parsley. Place a layer of potatoes in buttered baking dish and half of the sauce. Add the remaining potatoes and sauce. Bake at 375 for 45 minutes, or until nicely browned.
