Zucchini Pizza Casserole 4 cups shredded unpeeled zucchini, 1/2 tsp salt, 2 eggs, 1/2 cup grated parmesan cheese, 1 cup cheddar cheese (divided), 1 cup mozzarella cheese (divided), chopped green pepper, 1 lb ground beef, 1/2 cup chopped onion, 1 15 oz Italian tomato sauce. Place zucchini in strainer-sprinkle with salt-drain 10 min. squeeze out all the moisture you can. Combine zucchini with eggs, parmesan cheese and half of mozzarella and cheddar cheeses. Press into greased 13X9 pan. Bake @ 400 for 20-25 min. Brown beef with onion and drain. Add tomato sauce, spoon over baked zucchini, top with remaining cheese and green pepper. Bake 20 min more. Can be warmed up the next Day in the microwave. You can use any meat you want and sometimes I use pizza sauce. Enjoy
