Green Bean and Fennel Ragout

Adapted from The Moosewood Restaurant Cooks at home


Onions, sliced Olive oil 3 garlic cloves New potatoes, chopped Canned tomato, chopped Herbes de Provence (can order from Penzey’s) Water Green beans, topped and tailed Fennel, sliced Saffron Orange zest Lemon Salt and pepper 1. Saute onions in olive oil until tender and translucent 2. Add garlic. Saute 1 minute 3. Add potatoes, tomato, Herbes de Provence, saffron, orange zest green beans, fennel and water and cook until potatoes are soft. 4. Squeeze in lemon juice and season with salt
