Olive oil cooking spray 2 tbsp canola oil 2/3 cup light agave nectar 1/2 cup plus 1 tbsp applesauce, unsweetened 1 tbsp flaxseeds, finely ground 1 tbsp vanilla extract 1 tbsp apple cider vinegar 2 cups light spelt flour, scooped and than leveled 1 tsp baking powder 1 tsp baking soda 1/2 tsp salt 1 cup berries, Mixed frozen do not thaw 3 oz dark chocolate chopped 2 tbsp milk Preheat oven to 350F and line 12 cups of a muffin tray with paper liners In smal bowl whisk together oil, agave nectar, applesauce, 1/4 cup water, flaxseeds, vanilla and vinegar. Ste aside for at least 2 minutes while measuring dry ingreadients In large bowl, sift flour baking powder, baking soda and salt, Stur to combine. Pour wet mixture over dry mixture and stir to blend well Fill each muffin cup with about 1 sblp batter and put into about 1 tbsp berrys. cover with batter. Bake for 25 t0 30 min let cool Combine chocolate and milkin a microwave prof bowl. making sure not to burn chocolate heat until chocolate is melted, drizzle on top of cupcakes.
