The Sucant is found at a heath food store, like Clarks. I looked at Trader Joes but didtn see any, that does not mean its not there.
recipe:
1 cup unsweetened cocoa powder 1/1/4 cup Sucant, Divided 1/4 Cup Whole Wheat Flour 1/4 ssp salt 1/4 tsp baking soda 1 cup low fat sour cream 1/2 cup plus 2 tsp skim milk 1 tbsp olive oil 1/2 tsp vanella 1 whole egg 2 egg whites 1 oz bittersweet chocolate, chopped Preheat over to 350 f line muffin pan wiht paper cupcake liners In large mixing bowl combine cocoa powder 2 cup Sucant, flour, salt and baking soda In mixing bowl wisk together sour cream 1/3 cup milk. oil. vanilla and whole egg Make a well in center of dry ingredients and pour in wet ingredients Combine everything Add egg whites to still another mixing bowl and on high with the kitchen aide whisp whites until they get foamy. Add remaining 1/4 cup sucant very gradually to egg whites. until medium stiff peaks Fold whites in thrids into cake battef gently mix well with rubber spatualla make sure its all mixed well fill 12 cupcake liners 3/4 full with batter, bake for 45 min. do not let the mix stand and wait to go into hot oven. Have oven preheated. Remove from oven and let cupcakes cool Combine chocolate and remaining 2 tsp milk in microwave safe bowl. making sure not to over cook it will burn easilly. spread a think layer on top of each cupcake.
