1 1/2 cup whole wheat flour 1 1/2 cut carrots, sredded 1/4 cup raisins 1/2 cup sucant 2 tsp cinnamon 1/2 tsp nutmeg 1 1/2 tsp baking soda 1/4 tsp sea salt 1 whole egg 1 egg white 2 tbsp olive oil 1. Preheat oven to 350 degrees. lightly spray an 8x5 inch loaf pan with cooking spray. 2. In large mixing bowl. combine flour, carrots, raisins, cinnamon, nutmeg, baking soda, and salt; mix well. 3. Make a well in the center and add whole egg, egg while, oil and 3/4 cup water. Stir unitl flour is completely incorporated and batter is moistened 4. Pour batter into prepared loaf pan and bake 45 to 50 minutes or until a tookthpick inserted int he center comes out clean.
