These are the best brownies ever! They have a ganache "topping" which isn't really a topping at all , it just bakes into the brownies making them super rich and fudgy. Double dark Ghiradelli chips work well or add Hershey's mint chips to the "topping" if you want chocolate mint brownies.
Pre-heat oven to 350 Brownies: ½ c butter 12 oz chocolate chips 2 c sugar 3 eggs ½ t baking powder 1 ¼ c flour 2 t vanilla Melt chocolate chips (12 oz) and butter together in microwave for 90 seconds. Add chocolate mixture to sugar in a mixing bowl. Add eggs. Add flour and baking powder. Add vanilla. Pour into a greased 9” x 14” pan. "Topping" ¾ c whipping cream 6 oz chocolate chips ½ c sugar 3 eggs 1 t vanilla For topping, melt chocolate chips (6 oz) and cream together in microwave for 60 seconds. Beat eggs and sugar together. Add chocolate mixture. Add vanilla. (Mixture will be very runny.) Pour over brownie batter. Bake at 350° for 50 – 55 minutes. Chill in fridge overnight or for a few hours at least. Cut when cold and bring up to room temp before serving. These freeze well.
