Sweet Potato Burritos with Tomato Orange Salsa

Adapted from The Moosewood Restaurant Cooks at Home

recipe:

Burritos Onion, chopped Garlic, minced Oil, 1 tbsp per person Sweet Potatoes (one per person), grated Oregano Chilpotle powder (can order from Penzeys) Ground cumin Cheddar, grated Salt and pepper Whole wheat tortillas Saute onions in oil until tender. Add garlic. Saute 1 minute. Add sweet potatoes, cumin, chilpotle and oregano. Saute until soft and brown. Stir in cheddar. Fold into tortillas. Serve with salsa Salsa Fresh ripe tomatoes, chopped Green onions, chopped Green chilli Orange zest Orange slices, peeled Lime juice Cumin Cilantro Combine and serve
