Roasted Aubergine with Goat’s Cheese and Olives

1 large aubergine 1 tbsp olive oil 4 tbsp tapenade or similar olive spread 1 package fresh goat cheese Preheat oven to 400 degrees Slice aubergine lengthwise in 4 thick strips. Salt and drain. Rinse salt. Brush with olive oil. Place on baking sheet and roast until very soft and translucent Remove from oven. Top with olive spread and goat cheese. Put under broiler until cheese is slightly melted. Serve with bread or rice.
