This recipe is from a cookbook Sarah’s mum’s inlaws gave her so she could cook proper curries for her husband. It is delicious.
4 aubergine, chopped Oil 1 tbsp coriander seeds 4 dry red chiles 1 onion, chopped 2 tbsp unsweetened coconut 1 clove garlic 1 tsp sesame seed 2 oz tamarind paste salt brown sugar Fry aubergines in oil until translucent and light brown. Set aside. Fry coriander, chillies, chopped onion, sesame seed. Remove and grind, with coconut, to paste. Mix tamarind with water (1/2 pint) and other paste in saucepan and boil. Add salt and aubergines. Cover and cook for 5 minutes. Add sugar. Serve.
