Lemony Shortbread Cookies

Great for the summer months.


Beat together 1 cup soft margarine, and 1 cup sugar until light and fluffy. Add 1 tablespoon grated lemon peel and 1/4 cup lemon juice. beat until thoroughly blended. Gradually add 2 1/2 cups enriched self-rising flour until all is mixed into the dough. Chill cough at least two to three hours. Shape rounded teaspoons of dough into balls. Roll in sugar and place on ungreased cookie sheet at least two inches apart. Flatten each ball with bottom of a glass. Bake in a 350 oven 12 to 14 minutes until golden brown.
