Black Bean Salsa

I serve with corn chips. I prefer the "scoops" cause you can scoop with those. Enjoy!


1 can of black beans, rinse and drain well 1 can corn niblets, drain well 1 large tomato chopped or grape tomatoes 1 avocado chopped 2 jalepenos 1/4 cup cilantro finely chopped 2 cloves garlic finely chopped Dressing: 4 Tablespoons fresh lime juice 1/4 cup olive oil 1/4 cup red wine vinegar 1 teaspoon salt 1 teaspoon sugar pepper to taste In a deep bowl, add beans, corn, tomatoes, jalepenos, cilantro and garlic, saving the avocado for last. Mix the dressing and pour over ingredients.Mix gently. Let sit in the fridge overnight or a couple of hours.
