Altered from a Cooking Light recipe

2 TBSP olive oil small yellow onion small celery rib one clove garlic minced shredded carrot (optional) 1 lb ground beef ( I buy lean) 1 egg saltines fresh parsley - chopped (aprox. 2 TBSP.) 1 tsp Dijon mustard Heat oven to 375. Heat olive oil in a skillet. Add onion, celery, and garlic cook until soft 3-4 minutes. Remove from heat and let cool. In a mixing bowl ground beef, shredded carrot, chopped parsley, 1 egg and enough saltines (3-4) to make it less mussy. Add onions,celery, and garlic in bowl mix well. Using your hands mold it and place in a baking dish. (ungreased) Topping: 1/4 cup of brown sugar, 1 tsp yellow mustard, and 2 TBSP water. In a small bowl mix these ingredients add 1 tsp tomato paste, making a glaze. Brush this topping onto meatloaf. Add a strip of bacon to top. Bake for aprox. 50 minutes or when juices are clear when you prong with a fork. Let cool 10 minutes before you slice.
