Another fantastic compote from the Rose Bakery cookbook. Delicious with greek yoghurt.
5 sticks rhubarb, trimmed and cut into 2 inch pieces juice and grated zest of 1 orange 2/3 cup of caster sugar 1/2 punnet strawberries or blueberries Preheat oven to gas mark 4/180/350 Place rhubarb in baking dish with orange zest, juice and sugar. Cover with foil and bake for 15-30 mins - 'til the rhubarb has softened. Halve the strawberries if big ones. Stir the berries into the rhubarb. Chill.
