3 1/2 - 4 cups cooked long grain rice 9 tblsp. olive oil 2 medium onions or 12 green onions 6 stalks celery 3 8oz cans diced spicy tomatoes 3 tblsp. chopped parsley 3 tblsp. garlic powder 3 tblsp. paprika 3 tblsp. soy sauce 1 large chopped green pepper 3 tblsp. chili powder cayenne pepper (to taste of individual may be best to let each person add as wanted) 2- 2 1/2 lbs. chopped chicken, beef, sause or shrimp. Heat oil in skillet. Sautee onion, celery, green pepper over low heat till tender. Add rice, sauteed vegetables together in large serving pot. If too thick, add chicken broth. Brown meat in leftover olive oil in skillet and add to mixture. Add all other ingredients and stir briskly. Cook on low heat for 30-40 minutes. always tastes better 2nd or 3rd day. Hints: If thickens after leaving in frig, add chicken broth. Add juice from tomatoes to water when cooling the rice. Some people like sprinkled parmasan cheese on top.
