Works well with salmon steaks -- just adjust the cooking time

recipe:

Four 4-6 ounce centre-cut salmon fillets, skin on 1 cup dark soy sauce 4 oz maple syrup 1 oz dry sherry Marinate the salmon in a shallow container in the above ingredients for half an hour or so. Grill for 3-4 minutes flesh side down, turn carefully and grill for another 3-4 minutes. Serve immediately.
