From Vegetarian Cooking for Everyone. I squeeze extra lemon over the top and crumble a little feta over it. And yes, you sort of do need all that oil (it's the good kind of fat so don't worry about it.)
6 T olive oil 1 very large onion, halved and sliced 1 1/4 c green lentils 3/4 c white long grain rice salt and pepper Heat oil in a large skillet on med. heat. Add onion and cook, stirring occ., until it's dark golden, almost carmelized, 15-20 min. Meanwhile boil lentils w/ 1 Q water and 1 tsp salt. Boil, then simmer 15 min. Add rice and some pepper, cover and cook on low heat until done, around 15-20 more min. When it's done, stir in the onions, add more salt, pepper, lemon and feta on top.
