I've used many different kinds of mushrooms for this. The bland white ones are not nearly as good as wild or "baby bella" mushrooms. Good with polenta. Good with chicken.
recipe:
1 1/2 pounds trimmed and clean mushrooms, cut in half if very big 1/4 cup olive oil 2 tablespoons melted butter fresh thyme leaves salt and pepper Toss mushrooms with oil and butter in roasting pan. Add thyme. Season with salt and pepper. Put into 400 degrees oven. Roast until cooked though and juices are mostly evaporated. Between 30-40 minutes.
