Ginger Chicken

Adapted from a back issue of Real Simple. Tasty and easy.


4 chicken-breast halves pounded to 1/4 in. thick 2 scallions, trimmed and thinly sliced 1 2-inch piece fresh ginger, peeled and thinly sliced 1 lime, halved 3-4 tblsp olive oil 1/2 tsp salt a couple of pinches of ground pepper In a large bowl, combine the chickens, scallions, half the ginger, the juice from the lime, the oil, salt and pepper. Toss ot combine well and set aisde for 15 minutes. Meanwhile, in a large saucepan, combine the res tof hte giner and the juiced lime halves. Add about an inch of water, place a large steamer basket (or large colandar) in the pan, and bring to a boil. Remove the chicken fromthe marinade and place in the steamer in a single layer. Steam until cooked through, about 5 minutes, flipping once halfway through. You can also, if you prefer, saute the chicken breasts in a little bit of olive oil and the remaining ginger.
