Flemish Noodles

Good winter comfort food.


Leeks - 1 per person, chopped 1 tbsp butter 1 tbsp flour 1 cup milk Nutmeg, grated Salt and pepper Grated parmesan cheese Steam leeks until tender. Melt butter. Stir in flour gradually until completely absorbed. Turn heat to medium high. Then add milk, very gradually, stirring all the time, and wait until last addition is completely absorbed before adding more. Stir until thickened into a sauce. Add nutmeg, salt and pepper, and cheese. Serve over broad, flat egg noodles.
