Fast and yummy. Always my choice for my birthday dinner when I was a whippersnapper.
Saute in 2 TB olive oil: 1 large onion - coarsely chopped 1 large green pepper - coarsely chopped 2 large cloves garlic - minced Salt & Pepper to Taste Red Pepper Flakes to taste When vegetables are tender/crisp add: 1 can diced tomatoes w/juice 1 Large can Hunts tomato sauce 4 bay leaves 3-4 Tablespoons sugar, to taste Simmer 10 minutes and add 1 lb. raw shrimp. Cookuntil shrimp start to turn pink and remove from heat. Let sit for 10 minutes until shrimp cook through and serve over jasmine or Basmati rice. Great with a tossed green salad and a beer.
