Penne with red onion, sage and bacon

10 minutes prep time 25 minutes cooking time Recipe courtesy "Elle: Mexico." Super easy and extremely delicious (It's the bacon of course!)

400 g. penne pasta 300 g. red onion 120 g. bacon in fine slices 20 leaves fresh sage (can subsitute basil) ground parmesan or pecorino cheese 4 tblsp. olive oil salt and pepper to taste Peel the onions and cut them into fine strips. Cut each of the bacon strips into four pieces. Warm the olive oil in a non-stick pan. Add the bacon, sage, onion, and pepper. Let cook on a low flame for 20 minutes, stirring once in a while, until the onion and bacon are crispy and the sage leaves browned. Meanwhile cook the pasta al dente in boiling water with salt. Rinse. Add the pasta to the sauce and leave to season without stirring for 5 minutes. Sprinkle with grated cheese when ready to serve.
