This is the best kind of recipe: easy, impressive, delicious and not too fattening. Also good for autumn/winter. You can use pretty much any kind of wine for this - I've used both port and vin santo. If using a sweeter wine, adjust sugar accordingly. You can also add spices like cloves or nutmeg, lemon zest and a vanilla bean. From Deborah Madison

3 cups wine 1 cup water or orange juice 1 large piece orange zest, removed with a vegetable peeler 1/4 cup sugar 6 ripe firm pears 1 tbsp hone Combine wine, water, orange zest and sugar in large saucepan and bring to a boil. Peel and core pears. Halve them lengthwise. Simmer in liquid until pears are translucent around the edges. Transfer pears to serving dish. Add honey to liquid and simmer till syrupy. Pour syrup over pears. Cover with plastic wrap and refrigerate. Serve with a spoonful of mascarpone.
