Broccoli with Sweet Soy Sauce

This is a very fast, very delicious way to cook broccoli. It comes out firm, not soggy, and coated with flavorful sauce. In the original recipe, there was red bell pepper too. If you want to use the pepper, you can add that with the ginger in the very beginning and cook it for about 5 minutes before continuing with the rest of the recipe. Source: The Quick Recipe

2 tbsp soy sauce 2 tbsp rice vinegar 1 tsp sugar 2 tsbsp vegetable oil 1 tbsp minced fresh ginger 2 cloves garlic, minced or pressed 1 bunch broccoli, chopped coarsely as you would for stir-fry chopped scallions for garnish (optional) 1. Mix together soy sauce, vinegar, sugar, and 1/4 cup water in a small bowl and set aside. 2. In a pan with a lid, heat the oil until almost smoking. Add garlic and ginger and cook until fragrant, about 30 seconds. 3. Add broccoli and soy mixture. Cover and cook for a couple of minutes until broccoli is bright green. 4. Uncover and cook, stirring frequently, until liquid has evaporated, about 3 to 5 minutes.
