Creamy Cheese Tomato and Chicken Stew

2 lb. cooked boneless chicken 2 tsp. kosher salt 1/2 tsp. black pepper 1/4 tsp. cayenne pepper 1 tbsp. olive oil 1 pkg. frozen onion/seasoning mix 3 tsp. minced garlic 2 tbsp. flour 1 can diced tomatoes 1/4 cup tomato paste 1 can chicken broth 1 can black beans 1 can whole kernel corn 1-1/2 cups grated co-jack cheese 3 tbsp. heavy cream Heat oil in large pot over medium heat. Add onion/seasoning blend and brown. Add garlic, flour, tomatoes, tomato paste and stir and cook for 2 minutes. Whisk in broth then add chicken. You can use rotisserie, canned, or any cooked chicken. Add beans and corn and all seasonings. Bring to a simmer and cook until very tender for 25 minutes. Stir in 1-1/2 cups grated cheese and cream until all combined. Keep warm. Top with chopped green onions and more cheese if desired.
