Real Canadian Butter Tarts

Yes, Canada does have its own cuisine, and butter tarts are its shining star. Pecan pie is just a pale shadow in comparison. From The Canadian Living Cookbook, of course.

For pastry, prepare a flaky pie crust dough (see recipe) Filling 1/4 cup butter, cut into small cubes 1/2 cup brown sugar 2 eggs 1 tsp vanilla 1/2 tsp lemon juice Pinch freshly grated nutmeg 1 cup corn syrup 1 cup raisins Preheat oven to 375 F. Roll out pastry. Cut out 3 1/2 inch rounds to fit 3 inch tart tins. Line tins with pastry rounds. In a large bowl, combine syrup, sugar, eggs, lemon juice, nutmeg and vanilla. Stir in cubed butter and raisins. Fill each tart casing with filling. Bake 20 minutes or until pastry is golden and filling has set. Remove from tins and cool on rack.
