Hearty Eggplant Soup

2 TB olive oil 2 TB butter 1 med. Onion chopped 1 lb. Ground beef 28'oz. Can diced tomatoes 1 med. Eggplant, peeled and diced 1-2 garlic cloves, minced 1/2 C peeled, chopped carrots 1/2 C chopped celery 28 oz. Beef broth 1 tsp. Salt 1/2 tsp. Nutmeg 1/2 C uncoiled macaroni 2 TB chopped parsley Parmesan In lg. Kettle heat oil & butter. Add onion. Cook slowly and stir until soft Add ground beef Cook until brown Add tomatoes, eggplant,garlic, carrots & celery, broth, salt, sugar , nutmeg Bring to a boil Cover and reduce heat and simmer for 1-1/2 hours.Add macaroni & parsley. Cover SI,mer 10-15 minutes until macaroni is tender Serve hot with Parmesan sprinkled on top and s little extra chopped parsley Add more beef broth if it gets too thick
