2 C 2% milk 3/4 C fat free, low sodium chicken broth 1 C uncoiled quick cooking grits 1/4 tsp. Salt 1/2 C shredded Parmesan 2 TB butter 1 3oz. Pig. Lo fat cream cheese 3 TB chopped flat leaf parsley 1TB fresh lemon juice 2 lb. Egg whites 1 lb. Cleaned med. Shrimp, coarsely chopped Cooking spray Hot pepper sauce ( optional) Preheat oven to 375 % combine milk & broth. In a med. Heavy saucepan, bring to a boil Gradually stir in grits and salt stirring constantly. Remove from heat Stir in Parmesan , butter and cream cheese. Stir in parsley and next 4 ingredients through shrimp Place in baking dish coated with spray. Bake at 375 for 25 minutes or until set. Serve with hot pepper sauce, if desired.
